Morioka-style cold noodles with a unique chewy texture and irresistible beef bone soup

''Morioka Reimen'' is addictive with its strong chewiness that pushes back your teeth and smooth texture, and is one of the ''Three Great Noodles of Morioka'' along with Morioka Wanko Soba and Morioka Jajamen. The chilled soup is rich yet light, and the kimchi is a nice accent. This is a local gourmet dish representing Iwate that will blow away the summer heat.

Morioka Reimen was invented by Shodoen, a restaurant located in Morioka City. The first owner of the restaurant became popular when he adapted cold noodles from the Korean peninsula, where he was born and raised, to suit Japanese tastes. The noodles are made with potato starch instead of buckwheat flour, and the soup is generously made with beef bones. The kimchi topping adds spiciness and sourness to the soup, as well as the sweetness of the vegetables. It is a famous restaurant that has inherited the original taste since its establishment in 1955.

Many restaurants that serve cold noodles allow you to choose the level of spiciness, and some even offer separate spiciness (a separate plate of kimchi) that you can adjust while eating. There are many restaurants where you can only enjoy cold noodles, but cold noodles are also a great way to finish your meal after enjoying grilled meat.
