''Cold Meat Soba'' with a rich chicken soup and exquisite inaka soba noodles
Yamagata is also known for its soba noodles, and is famous for its ''board soba'' served in wooden boxes, but ''cold meat soba'', which was born in Kahoku Town, is also a popular gourmet dish that can be eaten all over the prefecture.
The "meat" used in Niku Soba is chicken. Moreover, it is characterized by using parent chicken, which has a rich flavor. The soup is made by making stock from the parent chicken and adding soy sauce and other ingredients, and the flavor is sweet and rich, making you want to drink it all down. Even when paired with fragrant inaka soba, the flavor of the chicken is unbeatable. The noodles are topped with plenty of crunchy chicken.
Soba restaurants have long been popular as places to drink alcohol, so the chicken on top of meat soba was also enjoyed as a snack. It is said that because the soup was cold, it was difficult for the soba noodles to spread, so people drank alcohol with the chicken and enjoyed the soba noodles at the end.
There are shops in Yamagata City that specialize in cold meat soba, and especially in the summer, they are crowded with customers from inside and outside the prefecture. Please feel free to enjoy this exquisite bowl of soba and chicken stock.
