''Zunda'' is a local dish eaten in Sendai and other parts of Tohoku, where edamame beans, which are in season in summer, are boiled, ground, and made into an filling by adding sugar and salt. Its characteristics are the aroma and gentle sweetness of edamame. ''Zunda Mochi'', a rice cake covered with plenty of red bean paste, is also a popular Sendai specialty.
The origin of the name zunda is that the word ''zuda'', which means to crush beans, came from zunda, and there are various other theories, including one theory that a farmer named Jinta called the rice cakes ''jinta mochi'' a corruption, and another that Date Masamune, the lord of the Sendai domain, ate the edamame by crushing them with the handle of his jintachi sword while in camp.
Miyagi Prefecture is the production area of Miyakogane, a sticky rice that is sticky and chewy and has a good taste. If you mix plump and smooth mochi with zunda bean paste, it becomes a dish unique to Sendai. You can enjoy the green aroma of seasonal edamame.
