Satoyama delicacies and dishes that go well with local sake

When you think of alcohol that goes well with meat dishes, you tend to think of wine, but it also goes great with sake. ''Morioka Tankaku Beef'' from Morioka is another brand of beef that should be enjoyed with sake. The beef, which is raised in a relaxed environment and spends spring to autumn on the highlands of nature, has low fat and a strong lean meat flavor. Due to its rarity, beef is not widely available on the market, but if you have the opportunity to try it, why not try it with sake from Morioka?

Also, ''Jajamen'', which is flat noodles mixed with meat miso, and the home-cooked ''Hitsumi soup'' are perfect to finish off after drinking alcohol. ''Hittsumi soup'' is commonly called ''suiton''. This dish is made by rolling out a thin layer of flour dough and simmering it in a soy sauce-based soup. The broth from the vegetables and chicken oozes out, and the dough is chewy. This is a particularly nice dish during the cold months.
