Today we will be traveling somewhere to report, mainly focusing on the six prefectures of Tohoku. I love traveling both domestically and internationally, even in my private life.

Akita City: Preserving tradition and aiming for better sake brewing. Takashimizu, an uncompromising sake

Enjoy sake alongside Akita cuisine
Akita Prefecture, with its rich fishing grounds and fertile land, is a treasure trove of food. Local sake is essential to Akita's local cuisine and specialty products. ''Taka Shimizu'', which is popular as a sake to accompany meals, has a wide lineup of alcoholic beverages that go well with each dish, from simple dishes that make the most of the ingredients to strong flavors. For example, pairing Akita's specialties with alcohol will enrich your meal time, such as Junmai Daiginjo with grilled fish such as overnight dried sandfish, and Seisen Spicy with Hinai Jidori yakitori and Iburigakko. On a snowy day, sitting in a warm room with a bowl of kiritanpo nabe or shottsuru nabe is one of the best things about winter.
Akita Sake Manufacturing, which explores the possibilities of Japanese sake while valuing tradition, has also developed ''Dessert Jungin'', a dessert sake that goes well with Western food and sweets, and ''Heat-Aged De-Sake'', which is made using a unique heating technology. He is full of the spirit of challenge, and I look forward to seeing his future developments.
