Brewed by master brewer Yamauchi using local water and rice as main ingredients.

Akita Prefecture, which is surrounded by mountains on three sides, has an abundant supply of pure snowmelt water. Akita Shuryu Seisaku, the brewery behind Akita's famous sake Takashimizu, is located in Kawamoto, Akita City, where the Omono River, Asahi River, and Taihei River converge. The soft texture and light aftertaste of ''Takashimizu'' is due to the river water drawn from a well on the premises. This time, we will introduce the charm of "Takashimizu", which is created by combining water, rice, and brewers.

Akita Prefecture is one of the nation's leading rice producers. At Takashimizu, we use rice from Akita Prefecture for most of our rice, except for Yamada Nishiki, which is used for Daiginjo.

In addition, our brewing rice mill was updated to the latest equipment in 2019. Each grain can be polished evenly, and high polishing of 20% or 35% is also possible.

The quality of sake has been improved by improving the quality of raw rice. We have also achieved good results at various competitions.

The brewer Yamauchi is essential to sake brewing in Akita. In the past, during the winter agricultural off-season, farmers would come to work and make sake, and Yamauchi Brewery was born in Yamauchi, Yokote City, where there were many farmers. Approximately 20 brewers at Akita Sake Brewery's main brewery are members of the Yamauchi Brewery Association. Every year from October to April of the following year, we brew sake while living together. The low-temperature, long-term fermentation method, in which the temperature of the moromi (mash) is lower than normal and fermentation takes time, is the reason why sake is produced with a rich aroma and flavor.

Gosho Nogura, another sake brewery in the city, has installed equipment such as temperature control equipment, and sake brewer Hitoshi Kato, who has been selected as a ''Modern Master Craftsman,'' produces sake on a small scale.

The sake brewed at our main brewery, which has a classic taste, and the sake brewed at our Gosho Nogura brewery, which has a modern taste, each have a different expression.
