“Morioka-ized” “soy sauce noodles” tasted in former Manchuria
The original shop of Morioka Jajamen is the ''Hakuryu (Pyron) Honten'' with a curtain in the center of Morioka City. Although it is a long-established store that has been in business for over 60 years, its origins lie in the food stall that the first owner, Mr. Takashina Nukikatsu, started in Morioka after the war. At this time, Mr. Takashina was serving an original menu with a twist on the local dish of Manchuria, where he lived before the war, called ''jiajiamen.'' It gained popularity through word of mouth, and before we knew it, it became Morioka City's signature gourmet dish. The origin of the soy sauce noodles is touchi, which is a Chinese miso, and is a noodle dish in which meat miso is stir-fried with minced pork, finely chopped bamboo shoots, shiitake mushrooms, etc., and topped with boiled noodles. Mr. Takashina says that he went through a lot of trial and error to find a recipe that would suit Morioka people's tastes, asking people who had tasted it and their impressions. That's how we arrived at the current form, which is based on Japanese miso and is made by frying and aging over a dozen ingredients such as ground meat and sesame seeds, and then putting the meat miso on top of chewy, flat noodles. This became the basic model for all Morioka Jajamen.
Not only is it a meal, but it's also perfect as an accompaniment to alcohol. Please enjoy a special moment with a cold beer and vigorous slurping of Morioka Jajamen.
