''Morioka Jajamen'' is considered one of the ''Three Great Noodles of Morioka,'' along with ''Wanko Soba'' and ''Morioka Reimen.'' The basic style of this menu is to put meat miso, shredded cucumber, and green onions on top of flat noodles similar to udon, then sprinkle chili oil or vinegar according to your preference, or top with chopped ginger and garlic, then mix well before eating. The warm noodles are coated with a special meat miso, and the flavor of the condiments and the crunch of the cucumber add a pleasant accent, creating an addictive taste. Once you've finished eating the noodles, it's standard to add a raw egg to the leftover meat miso and add some boiled noodles to finish off your meal with ''Chitantan.'' The soup combines the flavor of the meat miso and the mellowness of the egg, making the soup even more satisfying after the meal.
