Kiritanpo hotpot made from Hinai chicken becomes standard
As I mentioned earlier, Kiritanpo hotpot is now commonly made with the soup of Hinai Jidori chicken, but in fact, "Hinai Jidori" itself is a relatively new Jidori chicken that was created in 1973 by breeding the original Hinai chicken, which is a natural monument. Until then, a variety of chickens had been used, but Odate City, which is the production area for Hinai Jidori, focused on the characteristics of Hinai Jidori, such as ''it doesn't get hard even when cooked and has a good taste,'' and started selling it as a set with Kiritanpo. From there, it gained popularity, and in no time, ''Hinai chicken kiritanpo hot pot'' became the standard throughout Akita prefecture.
The key to enjoying kiritanpo hotpot is the timing of adding the kiritanpo. It will cook faster than you think, and if you overcook it, it will lose its shape, so make sure to thoroughly cook the chicken and other ingredients first, and add the kiritanpo last. You should be able to enjoy delicious Kiritanpo soaked in chicken stock.
